Some restaurants feed you. This one was designed to tell you a story.
Thistle and Stone is a farm-to-table dining concept set within a historic West End building in Edinburgh, where Highland farming meets Scottish architectural heritage. The design responds to the building's original sandstone bones while layering in modern lighting installations, natural materials, and a spatial narrative that connects diners to Scotland's agricultural tradition from the moment they walk in.
Three distinct environments were developed within a single footprint. The bar draws from the surrounding streetscape, with parquet flooring, a curved brass-detailed bar, and quartzite surfaces that balance warmth with precision. The private dining room takes a more intimate direction with moss acoustical ceiling panels, Viridian Odyssey walls, brass tables, and vintage bell cluster pendants create a space that feels like a secret worth finding. Each zone was developed with full material selections, furniture specifications, and detailed floor plans to demonstrate how the design holds together at every scale.
The concept was recognized with Hall of Fame honors from the Interior Designers Institute.
